Co-founded a freight dispatch operation, coordinating daily load assignments, driver scheduling and route planning to ensure on-time deliveries. Directed all Speciality Restaurant venues across three flagship vessels, leading and mentoring a team of 20+ crew in a high-volume, multi-outlet luxury dining operation. Designed crew schedules, rotations and side-duty assignments; partnered with the Executive Chef to maintain food quality standards and optimise food cost. Conducted monthly IPM performance evaluations for all Speciality crew; managed weekly and monthly inventory reconciliations with venue Supervisors. Achieved consistently high guest satisfaction scores through proactive service recovery and personalised dining experiences.

Oversaw all interior operations aboard one of the world's most prestigious superyachts, delivering bespoke luxury service to high-profile guests and ownership. Recruited, trained and managed the stewardess team; orchestrated VIP events, private dining experiences and seamless day-to-day hospitality. Managed provisioning, inventory and interior presentation to exacting owner standards.

Delivered award-winning fine-dining service across four contract rotations, serving 2,000+ guests per voyage in both a la carte and formal banquet settings. Progressed from Waiter to Assistant Maitre D', supporting dining room operations, staff coordination and daily seating logistics.
